lab, established to insure quality control and to
spur the continuous improvement of every pastry
we create.
Our goal is to achieve the best possible dough.
We begin by researching, analyzing and testing each
ingredient before it's accepted for inclusion. Then
we keep strict control of every step along the way
in production and baking.
When it comes to croissant and danish, the doughs
are laminated with 100% butter. This creates dozens
of layers of fat and dough - and provides superior
richness and taste. While that is a rather delicate
production process, we meet the daily challenge
and refuse to compromise the taste of our products.
Our quality control procedures ensure that every
day, the pastries are consistently up to our high
standards.
The proof is easy to find: It's in the sweet buttery
taste and the light, tender web-like structure of
every croissant and danish. And of course, all of
our other types of pastries undergo the same careful
scrutiny and perfected production process.
